  2. 3 Rebanadas pan de molde seco (dejarlo unos 3 días destapado)
  3. 125 gr Leche entera
  4. 350 g Carne picada de ternera
  5. 350 g Carne picada de cerdo
  6. 100 gr Queso parmesano en polvo
  7. 40 gr. pan rallado
  8. 3 cucharadas aceite de oliva
  9. Pimienta negra molida
  10. 2 cucharaditas sal
  11. 3 huevos grandes
  12. Salsa Marinara
  13. Aceite de oliva virgen extra
  14. 5 dientes ajo laminados
  15. 1 cebolla troceada
  16. 3 cucharadas concentrado de tomate
  17. 1,3 Kg. Tomate frito
  18. 2 cucharaditas azúcar
  19. 2 hojas laurel
  20. Sal y pimienta
  21. 5 hojas albahaca fresca

  1. Cogemos un bol grande para preparar las albóndigas. Ponemos el pan de molde seco, lo troceamos y le añadimos la leche.
  2. Una vez que esté empapado, añadimos el resto de ingredientes y mezclamos bien. Probamos y rectificamos con sal y pimienta al gusto.
  3. Hacemos las albóndigas del tamaño aproximado de una pelota de golf y las doramos en una sartén poco un poquito de aceite.
  4. Comenzamos con la salsa. En una cazuela o sartén honda ponemos un chorreón de aceite de oliva, la cebolla picada en trocitos y los ajos laminados. Ponemos a fuego medio y pochamos hasta que estén transparentes.
  5. Añadimos las 3 cucharaditas de tomate concentrado y seguimos cocinando unos minutos.
  6. Una vez que esté cocinada la mezcla con el tomate concentrado, añadimos el tomate frito, el laurel, el azúcar y la albahaca. Salpimentamos y dejamos a fuego medio unos 10 minutos.
  7. Añadimos las albóndigas previamente doradas y mezclamos con cuidado. Las albóndigas son delicadas y se pueden romper. Dejamos cocinar a fuego medio hasta que veamos que todo está bien hecho. En mi caso han sido unos 25 minutos.
    * Durante la cocción le damos varias vueltas a las albóndigas para que no se queme la parte de abajo.
  8. Cuando esté listo. Hervimos los spaguettis y añadimos las albóndigas y espolvoreamos parmesano.
